Varianta delicioasă a felului de mâncare tradițională, carnea de vită de mare este o adevărată trăire.

Ingrediente pentru 4 persoane:

  • 2 fileuri de eglefin (200 g fiecare)
  • 1 l de lapte
  • 8 cartofi (Charlotte)
  • 300 g de midii Bouchot
  • 1 ceapă
  • 1 măr (Reinette sau Belle de Boskoop)
  • 20 de grame de unt
  • 1 kg de varză gălbenușul fiert
  • 7 - 8 boabe de ienupăr
  • 8-10 porumbei
  • 1 vârf de chimion (sau chimen)
  • 10 cl de cremă lichidă (30% grăsime)
  • 300 g fileuri proaspete de somon
  • 4 langoustine
  • 100 g creveți gătite
  • Sare și piper

Untul alb:

  • 100g de unt dulce
  • 2 șobolani
  • 5 cl de vin alb
  • 2,5 cl de oțet alb
  • Sare și piper

Sauerkraut de mare

Mâncăruri tradiționale

- Cu o zi înainte: puneți eglefinul în desalinizată în 50 de centimetri de lapte, păstrați-l la rece.

A doua ziscurgeți și clătiți sub apă rece.

- Se curata si se spala cartofii. Îndepărtează-le și gătește-le în apă fiartă sărată cu sare, până când lama unui cuț ușor penetrează carnea lor. Scurgeți-le. Book.

- Răsturnați și tăiați midii. Spalati-le prin reinnoirea apei de mai multe ori.

Scurgeți-le. Puneți-i într-o caserolă la foc mare. Sezonul se acoperă și se fierbe până se deschid (se amestecă regulat). Scoateți-le din casier, scoateți-le.

- Se curăță, se spală și se taie ceapa în felii subțiri.

- Desprindeți mărul, scoateți miezul și tăiați în 8 sferturi. Saut în 10 g unt pentru a culori ușor.

- Într-o tigaie, topiți untul rămas, adăugați felii de ceapă. Se amestecă și se adaugă varză gătită, ienupăr, piper și chimion. Gatiti timp de 15 minute la foc mic si apoi amestecati in crema. Continuați să gătiți timp de aproximativ 10 minute. Adăugați sferturile mărului.

- Între timp, gatiți somonul (6 - 8 minute) și langoustinele (2 minute) cu abur.

- Încălziți creveții cu un abur.

- Tăiați fileurile de eglefin la jumătate, lăsați-le la 5 până la 6 minute în laptele rămas.

Pentru untul alb:

- Se curăță și se taie șobolanii în zaruri mici. Puneți-le într-o cratiță, turnați vinul alb și oțetul. Se aduce la fierbere, se reduce căldura și se lasă să se evapore până la valoarea unei linguri de lichid.

- Tăiați untul rece în bucăți mici. Incorporați treptat la căldură foarte scăzută. Whisk, sezon.

- Pe o farfurie, pregatiti un pat de varza, adaugati cartofii.

Puneți pește și fructe de mare.
